Today, I'll be making the famous Rainbow Shushi Roll! Rainbow Rolls are California Rolls on the inside, with all sorts of sashimi and avocado on top!
今天,我將會做大名鼎鼎的「彩虹壽司捲」(註一)!彩虹捲裡面是加州捲,上面有各種的生魚片和酪梨!
Rainbow rolls are very colorful but are actually pretty easy to make. So if you have any kind of potluck party, birthday party or any of them with some guests coming over. This would be perfect. So if you like to see and learn how to make them, please keep watching this video.

Here are the ingredients you need to make Sushi-Meshi, or sushi rice. On the left we have some salt and a little bowl. In the middle we have sushi seasoning. In the cup we have some sugar. And on the very right, we have HONDASHI, or bonito soup stock, which we are going to sprinkle into (the) pan in the very beginning.
這是做Sushi-Meshi,或是壽司飯所要用到的材料。在左邊我們有一些鹽巴和一個小碗。中間我們有壽司調味料。杯子裡我們有一些糖。在最右邊,我們有烹大師,或是鰹魚高湯,一開始的時候我們要撒在鍋子裡面。
You don't have to be exact with the measurements, but this is how my family mix our own Sushi-Meshi.
不需要太講究份量,但這就是我家自己拌壽司飯的方法。
So, I'm starting off by sprinkle a little bit of HONDASHI into this small pan. You really don't need that much. The next I'm gonna pour in this sugar and the salt. Now we are going to pour in the sushi seasoning. Turn the burner on to medium heat, and stir well until everything dissolves. Be sure to stop the burner before it starts to boil. And once it's done, we're gonna set it aside.
所以,我從灑一點烹大師到這小鍋子裡面開始。你真的不需要太多。接下來我將倒入糖跟鹽。現在我們要倒入壽司調味料。開到中火,並攪拌均勻至所有東西融化。確保在水滾之前關掉火。弄好之後,我們要把它放一旁。
Take off the top part of the avocado, and we are going to cut it into two pieces so we can take the inside seed out. Then cut it into thin, half-moon pieces like these.
切掉酪梨的頂部,我們要把它切成兩半,這樣就可以拿掉裡面的種子。然後把它切成薄薄的,像這樣的半月形。
Next thing we are going to take a cucumber and cut off the edge. Then we are going to slice diagonally so that the pieces are thin. Then you wanna top them one on another so that we can chop it into little pieces like this.
接下來我們要拿出小黃瓜,切去邊緣。然後我們斜切薄片。然後你要把它們一個疊著一個,如此就可以像這樣把它切絲。
Now we are gonna cut our first sashimi which is Hamachi, or yellow tail. Slice the knife down in diagonal so you can cut thinly. I also cut a little piece of Unagi, or eel. You are also going to need some sea stix, or crab sticks like this for the roll. And then wash the shrimps and I'm just going to dry them with some kitchen paper. And now I'm cutting another fish which is Maguro, or tuna. Make sure not to put pressure to the fish when you're cutting it so that doesn't get smushy. I cut some salmon as well. And now we are ready to make the sushi roll.

Lay a long piece of saran wrap like this. Now we are going to take the saran wrap to wrap the bamboo sheet, or Japanese Makisu. And we are going to use this to make this roll. We are putting saran wrap around the Makisu so that rice seasons stick to it. So make sure that you get all the edges.
像這樣鋪一塊很長的保鮮膜。現在我們要用保鮮膜包竹片,或是日文的Makisu。而且我們要用這個來捲。我們在Makisu周圍包上保鮮膜,這樣飯才不會黏在上面。確定你有包到每一邊。
We are going to take the sauce we made in the beginning. And we're going to pour some over white rice. Using a rice spatula, you're going to cut it and then turn the rice over so that is evenly coated. Place a thin sheet of seaweed on the bamboo sheet, and we are going to start to put the rice that we just made on top of it. Spread the rice evenly until you can barely see the seaweed paper.
我們要拿一開始所做的調味料。然後我們要倒一些在白飯上面。用飯匙切開並攪動白飯讓它平均的沾到醬汁。在竹片上放一塊海苔薄片,然後我們開始把剛做好的飯放在上面。平均攤開白飯直到幾乎看不到海苔為止。
Now, as you can see on this side, we are just putting the rice until the edge of the seaweed paper like this, but we are going to add some more rice to the other side so that it sticks out about half an inch from the seaweed. Make sure that the rice is stuck together so that it doesn't fall apart.

Now we are going to flip this over so that the rice is on the outside and the seaweed is on the inside when we wrap it, just (like) how it is in the California Roll. The first thing we are going to place is the crab stick. Pull it apart to make it into two even pieces, and we are going to place it right in the middle. Next, add some mayonnaise. Then we are going to place the avocados right behind the crab sticks. And then this space right here, we are going to add some cucumber slices.

Now this will be the hardest part. Making sure everything is wrapped, we are going to create the roll without squishing the rice. Once you feel like the rice is all nice and stuck together, you are going put further away from using the wraps all the way and bring it back, and you should end up with something like this.

Now, sprinkle some sesame seed over the roll. Now that we are done with our California Roll, we are gonna start by taking the tuna and placing it on the edge of our rainbow roll. Then we are going to follow it with an avocado slice. Next we are going to place the salmon a little bit on top of the avocado. Then we are gonna put another avocado slice next to the salmon. Then we are going to place our yellow tail in the same direction as the other fish follow by avocado. And we are going to take the tail off the shrimp. And then again, place this slightly on top of the avocado and then put another avocado in between. And lastly, we are going to put our eel on the very end.

We are almost done. We're going to place this saran wrap over the roll once more. Taking the previous bamboo sheet that we use, we're gonna make sure that everything is nice and rolled up. And starting from the middle, we are going to cut it into six even pieces. Now you can take the saran wrap off and place the pieces on a plate. As mentioned earlier, if you layer the fish on top of the avocado slightly, and then cut it evenly, you should end up with colorful Rainbow Rolls like this.

And finally, we are going to put some sweet eel sauce on the eel, along with a little bit of sesame seed.

Finished with the Rainbow Roll! Now it's time to eat it with some soy sauce.
